Telluric cuisine and river-fed flavours

At 450 metres above sea level, at the heart of the Puy-de-Dôme, the Michelin-starred restaurant Origines offers a striking panorama over the Monts du Forez and the Sancy massif. Amid calm and serenity, Origines signs a deeply rooted culinary experience, an ambassador for the modern gastronomic soul of Auvergne.

It is a cuisine of living things, telluric and riparian, born of magma, meadows, forests, volcanic massifs. It draws inspiration from traditional farming know-how and age-old local produce such as the Puy green lentil, the Planèze golden pea, Fin Gras du Mézenc beef, and verbena. Sustainable cuisine awarded a Green Star, it carries the relief of its terroir, sometimes gentle and soothing like green pastures, sometimes lively like the mountain torrents of the puys.

Curated by Auvergne native Vincent Gardarin, head sommelier, it is naturally rooted in the volcanic soil of the puys, showcasing the work of little-known winegrowers, rising artisans and renowned winemakers, for a frank and plural expression of Auvergne's terroirs.
